MATCHA BANANA BREAD

What is it?

A moist and soft version of classic banana bread, enriched with matcha.

Ingredients

  • 3 ripe bananas (mashed)
  • 2 Kinocha Scoops (4 g) Kinocha Ceremonial Grade Matcha
  • 180 g flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 100 g granulated sugar or honey/maple syrup
  • 2 large eggs
  • 80 ml oil
  • 1 teaspoon vanilla extract
  • 50 ml milk

Instructions

  1. Preheat oven to 175°C, prepare the mold.
  2. Combine dry ingredients: flour, baking powder, baking soda, salt, matcha.
  3. Whisk wet ingredients: bananas, sugar, eggs, oil, vanilla, milk.
  4. Combine wet and dry mixtures and gently mix with a Kinocha Bamboo Whisk or spatula.
  5. Pour into the mold and bake for 50-60 minutes. Perform a toothpick test.
  6. Cool and slice.

Tips

  • Bananas should be ripe.
  • Matcha must be sifted.
  • Do not overmix the batter.

Storage

  • 2-3 days at room temperature
  • 1 week in the refrigerator
  • 2-3 months in the freezer
